Sugar flowers are beautiful things. With care and patience they can be delicate fascimiles of real blooms, created using an edible medium which will last for months if kept dry and cool. As well as cakes they can make good display pieces, a sort of floral sculpture. The flowers are made from flowerpaste (gumpaste) , a very elastic sugarpaste that can be rolled and mainpulated into realistic petals that dry hard and brittle.
No cake at all – Some of the most creative and personal wedding cake ideas don’t even include a wedding cake. Think about having your very own dessert bar that would cost less than $1.50 per serving. Outside of the ordinary with the following: doughnut spread, home-made cookies, root beer floats, vintage or new candy in vases, and popcorn buckets. We are very much doing a DIY wedding in a venue which was an old veterinary uni building that now houses a Gin distillery – so naturally we are having a gin themed wedding – lots of juniper berry colours therefore we would love to have a rustic citrusy gin soaked cake with some quirky animal topperd would be amazing- as attempting to make our own might end up a total faliure and we’d not have enough gin left for the cake after trying it!

What about a sheet cake?  We do offer sheet cakes, and they are a great way to supplement cake servings, without paying for a huge tiered cake with 250 servings.  What I mean by that is, if your guest count is 250, order a smaller tiered cake (the most common size cake we bake is a 3 tier with 80 servings & shown in the photo above) and then supplement the rest of your cake servings with sheet cake.  Sheet cakes are basic frosted cakes, delivered to the kitchen, cut by catering staff, and never seen by guests, therefore they cost less per serving then a tiered cake.  Keep in mind, that we will only make sheet cakes for wedding clients ordering a two tier or larger cake from us.

A tiered cake means that the weight of your top tier (or tiers if you're getting extravagant) rests on the bottom tier. To prevent everything sinking into the cake and ruining your beatifully smooth icing, you need to put in some dowels. These can be foodsafe wood or plastic and are available, like everything else, from cakecraft shops or the internet.
Sadly, your cake isn't going to be preserved in a wedding cake museum for all time — or maybe not so sadly since that would be such a big waste of butter — so be sure to take lots and lots of photos. Most wedding photographers will take lots of shots of the cake, too, and you can ask the bride or groom for those later. And make sure to get one of yourself with the cake!
Royal icing is made with sugar and egg white or meringue powder. It hardens to a firm finish that can be piped or thinned for "flood work". It hardens fast and is ideal for making detailed shapes ahead of time. It can also be piped directly onto cake tiers and works beautifully for delicate work.[1] a few things to consider when working with royal icing: You must use grease free utensils. Humidity also affects the consistency of royal icing. a well known British cake decorator uses royal icing as a medium, Joseph Lambeth developed a style by creating layered scrolls with Royal Icing.
If you choose to make your own cake, allow yourself some extra time and manage expectations: you (or your bridesmaids) are likely not going to be able to craft a fondant-covered confection worthy of a magazine spread. Simple, rustic decorations are more achievable. You'll also want to plan your calendar accordingly. Take time to make a test cake and keep careful notes.
The base of any fruit cake recipe is the fruit mix. The cake batter is essentially just there to hold all of the dried fruit together. Although I have provided the recipe I used, as long as you end up with roughly the same total weight at the end you can alter the proportions to your taste. In this recipe I was short on mixed peel and currants, but bulked up with dried apricots scrounged from my baking cupboard. It's a very flexible type of cake.
Before you head to the grocery store, do your best to calculate how much of each ingredient you need. When scaling up a recipe, be sure to scale by area, not diameter of the pans.
