Music and surfing and two key themes we’d like to use for our wedding – it would be great to replicate musical notes and waves in a subtle way on our cake perhaps with flowers too. Our wedding is a diy affair. The cake is going to be my fellas job. He’s an engineer, so wants to build a crane that will be lifting the top teir inti place/hovering it above the rest of the cake. It’s a chance for him to put his personality onto something. He also wants to use his new laser cutter to design and make a bespoke topper. Some wedding cakes could also use flowers that are in season to reduce costs, instead of expensive, intricate icing. Blooms that aren’t in season often need to be flown in so they can be more expensive. And don’t rule out supermarket blooms! They can last longer and if you’re going for something simple they can be a great way of adding colour without blowing the budget.
Now you can attach the stamens. At this point edible glue will probably not be strong enough, so use some high tack non toxic glue such as PVA. For each seedhead you will need four or five small stamen bunches arranged evenly around the head. Glue the stamens to the base of the seed head, squeezing the end tight to the base and the wire to make them stick.
Another thing to note about cakes, the more detailed the cake design, the higher the price will be. And, just because a cake looks like a “simple” design, doesn’t mean that it is. I know there are many amazing cakes online, and in magazines and with cake artists pushing cake design to new limits, it’s easy to fall in love with so many of the beautiful cakes we all see. Things like hand painting, edible gold, sugar flowers, tons of little sugar pearls on the cake, all translate into beautiful designs, but also a higher cake cost. Some of these cakes can run as much as $15 per serving…gasp! But think about it, you go out to dinner at a chain restaurant and pay $15 for a so so meal, that was probably frozen and took about 20 minutes to make. A cake artist can spend HOURS from start to finish on your wedding cake, and we think our time is worth it. Cake decorating is an art and not just anyone can do it. Not to mention ingredient costs, like fresh fruit, butter and eggs! That stuff is expensive!
Another way to save money on your cake is to skip an outer layer of frosting. Naked cakes are not only gorgeous to look at, they're actually pretty practical too. They're a lot less expensive because they use less buttercream and take less time—it's as simple as that. To make up for the lack of frosting on the outside, up the wow factor on the inside by experimenting with unique flavors and fillings, like lemon curd, champagne buttercream or chocolate ganache with toasted almonds.
Not every bride or groom wants a homemade wedding cake, so don't pressure them to agree to let you bake. If she wants a cake from a specific bakery she loves or he thinks pies would be a fun alternative, then graciously offer to help with another part of the wedding. Depending on where you're baking and decorating, a homemade wedding cake in the middle of wedding week preparations can add a lot of stress and mess. So don't be insulted if the bride and groom aren't into the idea. Everyone needs to be on board and on the same page.

I love the idea of decorating our own wedding cake. I am very crafty and making lots of decorations for our big day. If I was to win this competition I would paint my own bride and groom peg dolls and have mr and Mrs bunting on top. I would probably also have the cake on a wooden slide and decorate the tiers with a dusty pink ribbon to match our colour theme 🙂
Royal icing is made with sugar and egg white or meringue powder. It hardens to a firm finish that can be piped or thinned for "flood work". It hardens fast and is ideal for making detailed shapes ahead of time. It can also be piped directly onto cake tiers and works beautifully for delicate work. a few things to consider when working with royal icing: You must use grease free utensils. Humidity also affects the consistency of royal icing. a well known British cake decorator uses royal icing as a medium, Joseph Lambeth developed a style by creating layered scrolls with Royal Icing.
A tiered cake means that the weight of your top tier (or tiers if you're getting extravagant) rests on the bottom tier. To prevent everything sinking into the cake and ruining your beatifully smooth icing, you need to put in some dowels. These can be foodsafe wood or plastic and are available, like everything else, from cakecraft shops or the internet.
Limit decoration to the cake being iced and decorate it instead with a simple ribbon. This will save on either a cake topper or fresh blooms but still look chic on the big day. Choose a ribbon that matches your colour scheme and finish with a vintage brooch. Alternatively, we love this idea of using a stencil and dusting Mr and Mrs onto the top of your cake with icing sugar – a real talking point, and it will look great in your photos!
i used them for a baroque wedding cake i made a few months ago. it was a four-tiered rectangular cake (each stack placed at different angles atop one another) and was covered in fondant painted in gold/red stripes. then i placed the poppies around the corners of the tiers. they weren't as vivid as yours though :( - ill try making them with red gumpaste/fondant next time.

I find making sugar flowers calming, there's simething quite zen about the repetetive task of making petals, and it gives a great sense of achievment, but it does take some time. If making your own flowers it's best to start early. The cake I made uses my friend's favourite flowers, poppies, made from sugar, and making 12 of these took me a good couple of days. The method for the poppies can be used for other open petalled flowers, such as open roses and anemones.
Sheet Wedding Cakes – A full-size sheet cake typically feeds about 108 people. The cost at your local grocery store or warehouse discount store of a full-size sheet cake will be about $50. A 100 tiered cake would be a combined 3-tier cake. Going by the formula above, you professional wedding cake would be a minimum of $150 for 100 people. But let’s be real. Depending on what you want most professional wedding cake bakers will charge more than $1.50 per slice just for the sheer time to bake and frost a 3-tier cake.
